Jeffrey Bridge's Vegan Posole

Posole is a traditional soup or stew from Mexican cuisine. In Mexico, posole is typically served on New Year's Eve to celebrate the New Year. Note from Jeffrey: Don't be afraid to let it simmer for a long time. In New Mexico traditional families it is left on the stove simmering slowly all day so that it is ready when friends drop in for a visit.

Ingredients
  

  • 2 tbsp olive oil
  • 1 lb corn hominy
  • 2 cups yellow onion large, chopped
  • 12 cloves garlic small handful, chopped
  • 3 cups green chile mild, chopped
  • 1 tsp sea salt
  • ½ tsp black pepper
  • 2 cups pinto beans cooked, optional
  • 1 cups tomato paste
  • 1 cups water add more when needed

Instructions
 

  • Soak dried hominy in water overnight before cooking it, so it starts rehydrating. After soaking, it can finish cooking in the vegetable stew.
  • Cover pinto beans in water and soak at least six hours or overnight. Drain and cook in a large pot or cook in a pressure cooker. Soaked pinto beans cook in a pressure cooker in 9 minutes (let the pressure come down naturally).
  • In a large stock pot saute' one or two large chopped yellow onions with a small handful of chopped garlic. When translucent, cover with hot water to fill the stockpot halfway and start to simmer.
  • Add the posole (hominy) with some mild chopped green chile (about two or three cups worth).
  • Add salt and pepper and simmer for a few hours.
  • Check as it cooks to see if it needs more hot water and add as needed.
  • Add tomato paste near the end of the simmering. Note from Jeffrey: Traditionally, I think you wouldn't but I like the extra flavor it gives.
  • Don't be afraid to let it simmer for a long time. In New Mexico, it is left on the stove simmering all day so that it is ready when friends drop in for a visit.

Note 1: Hominy is a variety of dried corn (maize) kernels that have been treated with an alkali, such as lye, to improve digestibility. You can purchase dried or in cans in the international section of a grocery store, or in a Mexican grocery store. Hominy is also sold on-line.
Note 2: Organic pinto beans can be purchased bulk from Grajeda Farms, Hatch, NM. Save time by preparing them in a pressure cooker. You can cut cooking time down even further by using canned pinto beans.
