Lemon-Tahini Dressing

Tahini can be used to flavor sauces and soups or to make salad dressings creamy. If the oil rises to the top, just give it a good stir before using. This dressing can also be usedas a sauce for steamed broccoli and other vegetables, baked potatoes, or beans. Freshly squeezed lemon or lime juice provides Vitamin C with no sulfites.

Ingredients
  

  • ½ cup water (125 ml)
  • cup tahini (85 ml)
  • cup lemon or lime juice (85 ml) freshly squeezed, organic
  • 1 tbsp tamari (15 ml)
  • 2 cloves garlic crushed
  • 1/16 tsp cayenne optional

Instructions
 

  • Put the water, tahini, lemon juice, tamari, garlic and optional cayenne in a blender and process until smooth, about 30 seconds. Stored in a sealed container in the refrigerator, the dressing will keep for 3 weeks.
  • Use 2 tablespoons (30) ml) of dressing for a side salad and 1/4 cup (60 ml) for a main dish salad.
